Pan Seared Salmon with Cherry Tomato Salsa

INGREDIENTS

METHOD

  • 2 Wild caught Salmon Fillet

  • 1/2 cup cherry tomatoes

  • 2 cloves garlic, minced

  • 1 small white onion, sliced

  • 2 tablespoon olive oil

  • 1 tablespoon lemon or lime juice

  • 1 tablespoon fresh oregano, chopped

  • 1 tsp lemon zest

  • Salt & black pepper

  1. In a small bowl, combine half the garlic, salt, pepper, secret spice, lemon zest, lemon juice and olive oil. Rub the salmon thoroughly with the mixture on both sides. 

  2. Place a griddle pan/skillet over medium heat and sear for about 4 minutes on both sides or until salmon is cooked through.

  3. In a small bowl, combine the garlic, lemon zest, lemon juice, olive oil, salt and pepper. Add the cherry tomatoes. Toss the mixture together.

  4. Serve mixture over cooked salmon
