Cajun Chicken Skewers

  • 200g chicken fillets

  • 1 teaspoon ginger, minced

  • 2 cloves garlic, minced

  • 1 teaspoon cumin

  • 1  teaspoon cajun seasoning

  • 1 tablespoon soy sauce

  • 1 teaspoon chilli flakes

  • bell peppers, different colors, cut in cubes

  • Small red onions, cut in cubes

  • 2 tablespoon olive oil

  • Salt & black pepper

  • Skewer Sticks

  1. Soak skewer sticks in water.

  2. Cut chicken fillets into 2-inch cubes and season with salt, black pepper & secret spice.

  3. In a small bowl, combine olive oil, ginger, garlic, cumin, cajun seasoning, soy sauce and chilli flakes. 

  4. Pour marinate over chicken, cover and refrigerate for at least 1hr.

  5. Run chicken through skewer sticks, putting bell peppers and onions between chicken cubes.

  6. Cook on griddle pan/skillet over medium heat turning occasionally to ensure even cooking.

  7. Cooking time should be between 8-10minutes.

  8. Serve with potato wedges or grilled potatoes
