Honey Lime Chicken Salad

  1. Cover your chicken breasts with cling film and beat with a meat tenderizer until chicken is about 1inch thick.

  2. In a small bowl, combine olive oil, honey, lime juice, garlic, salt and black pepper.

  3. Divide the mixture into 2 halves, marinate your chicken in one half and save the other half.

  4. Set up a grill or griddle pan and grill chicken on both sides until chicken is cooked through.

  5. Combine mixed leaf salad, cherry tomatoes and  plums in a serving dish and top with chicken.

  6. Drizzle with other half of dressing.
