Lobster Rocket Sandwich



  1.  In a bowl, combine the lobster meat, mayonnaise, lemon juice, celery, parsley, secret spice, salt and pepper to taste.

  2. Brush cut side of ciabatta bread with butter, layer with rocket leaves and top with lobster mix

  • 1/2 cup mayonnaise

  • 1/2 cup rocket leaves

  • 2 tablespoons freshly squeezed lemon juice

  • 2 inner celery stalks and leaves, finely chopped

  • 2 tablespoons chopped fresh parsley leaves

  • Salt and freshly ground black pepper

  • 2 Ciabatta Bread, split and lightly toasted

  • Melted butter, for brushing
