Malawian Spiced Chicken Curry



  1. Set a frying pan over medium heat, add oil then butter.

  2. Season chicken with salt, black pepper and secret spice.

  3. Brown the chicken in the oil, transfer to a large pot.

  4. In the same frying pan, saute the onions, tomatoes, curry powder, thyme and chilli for about 6 minutes

  5. Pour in chicken stock and water and bring to a boil. 

  6. Check for seasoning and adjust if necessary.

  7. Transfer the sauce into the pot containing the chicken and simmer, covered, for 45minutes. Add the potatoes and cook for a further 20 minutes.

  8. Serve with rice or enjoy on its own.

  • 3 onions, rough chopped

  • 2 tablespoon vegetable oil

  • 1 tablespoon butter

  • 2 tablespoon curry powder

  • 5 tomatoes, chopped

  • 1 green chilli, chopped

  • 1 teaspoon dried thyme

  • 2 cup chicken stock

  • 1 cup peeled cubed potatoes

  • 1 cup water

  • Salt & black pepper
