Surf 'n' Dodo



  1. Season plantain with salt, black pepper and secret spice. Deep fry until golden brown.

  2. Set a wok over high heat and add olive oil once pan is hot

  3. Add prawns and season with salt, black pepper and secret spice

  4. Add garlic, chilli, carrots, lemon juice and bell peppers

  5. Top with spring onions just before prawns are cooked through

  6. Serve with plantain

  • 2 fingers of plantain, peeled and sliced

  • 200g king prawns, cleaned and deveined 

  • 1 medium carrot, julienne cut

  • 1 red bell pepper, julienne cut

  • 1 clove of garlic, minced

  • 1 bird's eye chilli, deseeded and minced

  • 1 tablespoon lemon juice

  • Bunch of spring onion

  • 1 tablespoon olive oil

  • Salt & black pepper
